Instructions

Step 1
Cook pasta according to directions. Reserve at least 1/2 cup of pasta water, I recommend saving more just to be on the safe side. The pasta water will help get our sauce consistency creamy.
Step 2
Dice your shallots, mince your garlic, and drain some of the oil from the jar of sun dried tomatoes. Save at least 1.5 tablespoons of the oil.
Step 3
In a sauce pan on medium heat, melt your butter and add your sun dried tomato oil.
Step 4
Add your diced shallots and minced garlic. Cook until soft and fragrant. Then add your sun dried tomatoes. Cook until soft and oils have released.
Step 5
Add in tomato paste, bacon bits, and seasonings. Let cook down for at least a minute.
Step 6
Add heavy cream and mix until thoroughly combined.
Step 7
Let heat until bubbly and then add your pasta water. Start with half a cup and add more to your liking until sauce is creamy and thick.
Step 8
Add in shredded mozzarella cheese and fresh shredded parmesan cheese to taste.
Step 9
Add pasta and combine to coat in sauce.
Step 10
Serve and enjoy!
