Lasagna Soup

I always season and measure with the heart so I don't have exact measurements for this recipe, please season to taste 🫶🏼

Instructions

Step 1
In a large pot over medium high heat, heat 2-3 tablespoons olive oil. Add in diced yellow onion/shallot, green pepper/red pepper,diced tomatoes,minced garlic & carrot shreds to a large pot. Sauté for 5-7 minutes or until translucent
Step 2
Then you will add your choice of ground beef/ ground turkey or both & the following seasonings ( paprika,beef bouillon cube, Dominican oregano, Italian seasoning, salt, black pepper,garlic powder, creole seasoning, red pepper flakes). Stir occasionally until meat is browned
Step 3
Stir in your tomato paste, spicy marinara sauce and chicken broth. Bring to a boil and then add your broken up lasagna noodles. Reduce heat to medium low and cook for about 20-30 minutes or until noodles are soft and ready to eat. Then you’ll pour in heavy cream and fresh chopped parsley/basil. ( simmer for an additional 3-4 minutes) Tip: Stir in shredded mozzarella to make your soup extra creamy and cheesy
Step 4
Cheese mixture: In a small bowl, stir together shredded mozzarella cheese, grated parmesan cheese, ricotta, chopped parsley/ basil & black pepper/salt (season to taste)
Step 5
Serve hot w/ a scoop of your cheese mixture & garnish with fresh basil 🤎
