Instructions
Step 1
Cook chicken breast with salt and pepper.
Step 2
In a sauce pan saute garlic and onion. Break stems of Chilies, slit sides, remove majority of seeds. Put Chilies in a medium sauce pan with 4 cups of water keep covered. Bring to a boil then simmer for 15 minutes. Then sit to cool.
Step 3
In a large pot add chicken broth, cumin, oregano. Bay leaf, and salt simmer for 10 minutes. Remove bay leaf and add hominy and simmer for 10 minutes more
Step 4
After Chilies mixture cools put into blender. Strain into chicken broth mixture.
Step 5
Add chicken and 1/2 top of salt and juiced lime.
Step 6
Pour over in a bowl of:
Diced avocado
Shredded cabbage
Diced Radishes
Cilantro Add a squeeze of fresh lime.
