I made these on a whim after realizing I hadn't eaten enough that day and used what I had on-hand. It may not be traditional, but it's still just as good and packed with protein and collagen.

Instructions
Step 1
1. Mix broth, mirin, soy sauce, sugar, and salt in a pan and mix together.
Step 2
2. Add your onions and cook on medium heat with the lid closed until the onions have softened (10ish minutes).
Step 3
3. Add your beef and continue cooking until the beef is done (around 5 minutes).
Step 4
4. Skim off any fat and add the gyudon to a bowl of rice, pouring some of the broth on top.
Step 5
5. Optional: top with a fried egg, sesame seeds, and green onions.
