peeled and pitted
⅓ cupreduced-fat sour cream
¼ tspsalt
1 x 15 ozcan reduced-sodium black beans
drained and rinsed
1 x 8 ozcan unsweetened crushed pineapple
undrained
1mango
medium, peeled and cubed
½ cupsalsa
1 x 8.8 ozready-to-serve brown rice

1 lbshrimp
uncooked, 31 to 40 per lb, peeled and deveined
1 tspCaribbean jerk seasoning
1 Tbspcanola oil
2green onions
chopped
4lime wedges
Instructions
Step 1
In a small bowl, mash avocado and sour cream together with salt until smooth. In a small saucepan, combine beans, pineapple, mango and salsa. Heat through, stirring occasionally. Prepare rice as package directs.

Step 2
Toss shrimp with jerk seasoning. In a large skillet, heat oil over medium-high. Add shrimp; cook 2 to 3 minutes, until pink.
Step 3
Divide bean mixture and rice evenly among four bowls. Top with shrimp and green onions. Serve with avocado cream and lime wedges.
