Spicy Korean Chicken Stew (Dakdoritang)

This hearty braised spicy chicken stew is a popular Korean comfort food. The chicken is braised in a delicious spicy, rich but slightly sweet broth with wonderful add ins such as potatoes, carrots and sweet potato glass noodles.

Prepare the ingredients:
Step 1
Clean the chicken drumsticks well. Peel and cut the potatoes and carrots. Slice the onion and cut the green onions.

Mix the sauce:

In a bowl, mix soy sauce, gochujang, gochugaru, sugar, minced garlic, and minced ginger to create the sauce.

Braise the chicken:

Add 5-6 chicken drumsticks to a deep skillet.

Add the chopped onions and pour the sauce over the chicken in the pot. Mix well to coat everything in the sauce.

Pour in chicken broth, making sure the chicken is about 70% submerged. I used about 1 3/4 cup of broth but depending on your skillet, you may need more. Adjust accordingly!
Step 6
Bring the mixture to a boil and then reduce the heat to low. Cover and simmer for about 20 minutes. Stir occasionally to make sure the bottom does not burn.
Add the vegetables:

Add in the carrots, potatoes, and green onions. Cover and simmer for an additional 15-20 minutes or until the potatoes and carrots are fork tender.

Make sure to stir occasionally, and spoon the sauce over the chicken and veggies.
Add the noodles,

Uncover and add the sweet potato glass noodles. Cover and cook for an additional 5-7 minutes or until the noodles are soft.
Step 10
Uncover the skillet and evenly drizzle 1 tbsp of sesame oil on top of the dakdoritang. Leave the skillet uncovered and cook the dakdoritang for an additional 5 minutes to allow for the sauce to thicken slightly.

Taste the broth and adjust the seasoning if needed. You can add more soy sauce, sugar, gochujang, or gochugaru according to your preference.

Garnish with green onions and serve hot with steamed rice.
