Instructions

Step 1
Put the lemongrass, garlic, chilli, ginger, and a tbsp water into a blender and blitz into a paste.
Step 2
Pour 100ml boiling water into a jug, add creamed coconut and whisk with fork until milky.
Step 3
Melt the coconut oil in a pan, add the paste and cook for 1-2 min before adding the coconut milk
Step 4
Bring to a simmer then add money tour and king prawns and cook for 2-3min.
Step 5
Serve with a swizzle of lemon juice and season with soy sauce
