These big fat juicy dumplings are Korean mandu. Arguably one of the best kinds of dumplings. The ingredients of the filling are typically cut, not processed or blitzed for extra texture and bite.

200gvegan ground beef
230gground pork plant-based
1 tspginger
grated
3cloves garlic
finely minced
0.5onion

70gsweet potato noodles
dangmyeon
1 ½ cupgarlic chives

medium, crumbled

DUMPLING WRAPPERS
Instructions
DUMPLING WRAPPER (Mandu-Pi)
Step 1
Mix the water, flour and salt together to form a scrappy dough. Turn out onto your work-surface and knead into a ball. Wrap in a plastic bag and let sit for 20 minutes to soften the dough.
Step 2
Take dough out of bag - it should be nice and soft now. Knead for 6- minutes until smooth then place in the bag again and let sit on the counter for 40 minutes. You can mix your filling while you wait.
Step 3
Remove dough from bag. Roll dough into a log and cut dough into about 20 round pieces. Roll each piece out carefully until you have a wrapper. Dust a large plate or platter with cornstarch. Dust the wrapper generously with cornstarch before you place onto a platter and cover with a tea towel as you roll the rest of the wrappers or they will stick together. repeat til you finish all your wrappers. they don't have to be perfect - they're homemade!
FILLING
Step 4
Boil dangmyeon for about 7-8 minutes until soft. Drain and rinse well with cold water. Then chop up into small pieces and place into a large mixing bowl with the rest of the ingredients. Mix very well.
WRAP DUMPLINGS
Step 5
Place a heaped spoon of filling into the centre of your dumplings skin. Seal them up and fold as desired (there's lots of good youtube videos on different ways to fold dumplings). Place folded dumplings onto a plate/platter dusted with cornstarch.
PAN FRY
Step 6
Place a little oil in a pan and heat on low- medium heat. Fry mandu on all sides until golden brown on all sides. Recommend serving with a dipping sauce of soy sauce, a little dark vinegar, sesame oil, gochujang and spring onion.
