Ingredients
6 servings

1 lbchicken thighs
cubed

1 jarartichoke hearts
chopped

0.5 bagbaby spinach
chopped

onion
chopped

2 Tbspolive oil

2 Tbspsundried tomato paste

italian seasoning

Pasta
penne or rotini preferred
Roux and Sauce
Instructions
Step 1
Mix chicken, onion, garlic, olive oil, and tomato paste, and Italian seasoning
Fully cook chicken, remove from pan, and set aside
Roux and sauce
Step 2
In same pan, combine butter, garlic and stir until melted.
Add flour and stir until foamy
Add milk and stir until it thickens
Add shredded parm and stir until melted
Step 3
Fully cool pasta in separate pot
Add pasta to sauce with a bit of pasta water and stir.
Add chicken, artichokes, and spinach, stir, and cover for 5 min until spinach wilts
OPTIONAL
In over safe pan, cover all with shredded mozz and bake until top cheese is brownish
