Instructions
Step 1
Start by boiling 1/2 cup water in a small pot for your quinoa, and prepare according to instructions
Step 2
While that's cooking, heat a large pan over medium-high heat. Add a bit of oil, then sautee your onions for 3-4 minutes, or until translucent. Add your bell pepper and cook for another 3 minutes.
Step 3
Add the ground turkey to the pan and cook for another 6 minutes or until fully browned. Then add your seasoning to the pan and cook for another 1-2 minutes
Step 4
Prepare your bowl. I start by putting my kale at the bottom of the bowl, and then pouring the quinoa on top of it. That way it softens the kale with the heat. Add the turkey mixture on top of that, then serve with cheese, chipotle mayo sauce, salsa (I used a black bean salsa), limes, cilantro, and jalapeno
