Instructions

Step 1
Cook the 1 cup of rice and set aside.
Step 2
Cut the tops and stems out the peppers. Preheat oven to 375.
Step 3
Boil a pot of water and place peppers in the water for 5 minutes to soften. If not soft after 5 minutes, leave in water for another 5 minutes
Step 4
While peppers soften, dice the onion and begin carnalizing them on the stove with a paprika sprinkled over top of them.
Step 5
Mix all the seasoning into a mixing bowl and then mix into the ground beef. Then begin cooking the meat on medium heat allowing it to simmer. Once the meat is about 80% done, mix in the onions, tomatoes, and rice.
Step 6
Once the meat is done cooking take of heat and mix 1/2 of all the cheese into the meat sauce.
Step 7
Fill the peppers with a spoon and then top with the remaining cheese
Step 8
Place all peppers in a baking dish and cover the bottom of the baking dish with a small layer of water.
Step 9
Bake peppers for 30 to 35 minutes or until the peppers are soft and the cheese on top has melted and partially baked. Then remove and garnish with parsley or cilantro
