Chicken Thighs & Sweet Potatoes
4chicken thighs
2sweet potatoes
medium, peeled and cut into chunks
2 tablespoonsharissa paste
1 teaspoonground cumin
1 teaspoonsmoked paprika
Fresh cilantro
or parsley, for garnish
Yogurt Sauce
Instructions
Step 1
Preheat your oven to 400°F (200°C).
Step 2
In a bowl, mix Harissa paste, olive oil, salt, pepper, ground cumin, and smoked paprika.
Step 3
Mix chicken thighs, sweet potatoes in a bowl & sweet potatoes in a bowl, let sit for 15 mins to 1 hou
Step 4
Place sweet potatoes and chicken thighs on 2 baking pallns. Roast in the preheated oven - chicken for about 15 minutes or until the chicken is cooked through and 20 - 30 minutes or until the sweet potatoes are tender.
Step 5
While the chicken and sweet potatoes are baking, prepare the yogurt sauce. In a bowl, mix Greek yogurt, minced garlic, lemon juice, salt, pepper, and chopped mint if using.
Step 6
Once the chicken and sweet potatoes are done, remove them from the oven and let them rest for a few minutes.
