Burgers
1 cuprolled oats
1 ½ Tbspwalnuts
1 ½ Tbspalmonds
1 ½ Tbsppumpkin seeds
2eggs
½ Tbsppaprika
2cloves garlic
minced

Instructions
Roast the capsicum:
Step 1
Place capsicum pieces onto a baking tray lined with baking paper. Put into a pre-heated 180C oven to roast for 15-20 mins or until slightly charred.
Make the pesto:

Add all ingredients into a food processor and blend until a paste forms.
Make the burgers:
Step 3
Add all ingredients into a food processor and blend until a thick batter forms.
Step 4
Desired consistency is that it holds together for a second or two on an upside-down spoon before falling. If mixture is too thick add a little bit of water to loosen, or if mixture is too runny add some more oats to thicken.
Step 5
Heat some oil in a frying pan over medium heat. Spoon portions of the mixture into the pan, cooking on each side for 5-6 minutes or until golden.
Serve:

Slice burger buns in half and toast, then spread some pesto on each of the bottom buns.
Step 7
Place the rocket then capsicum onto the buns, finishing off with a cooked patty and the top side of the bun.
