Instructions
Step 1
Slice onions and beetroot. Melt tsp coconut oil in frying pan. Place onion in pan then beetroot on top in a single layer place thyme on top. Put lid on. Add dash of water towards the end to steam and then to deglaze.

Slice mackerel
Step 3
Assemble in plate. Pour deglaze from pan over while dish then drizzle of oil
