Instructions
Step 1
Rinse the spinach leaves and pat them dry.

In a small bowl, whisk together the cocoa solution (cocoa powder boiled in 2 cups water), eggs, balsamic vinegar, olive oil, salt, and pepper to make the vinaigrette.

In a large bowl, combine the spinach leaves, watercress, tomatoes and tuna.
