Instructions
Step 1
Rinse quinoa and lentils in cold water.
Step 2
In a large pot, bring 4 cups of water to a boil. Add quinoa and lentils and reduce heat to low. Cover and simmer for 20 minutes.
Step 3
Remove from heat and let cool.
Step 4
In a large bowl, combine spinach, quinoa, lentils, red onion, red bell pepper, yellow bell pepper, cucumber, parsley, cilantro, mint, basil, dill, chives, tarragon, rosemary, thyme, oregano, sage, marjoram, savory, bay leaves, fennel, lemongrass, ginger, garlic, and shallots.
Step 5
Mix well and serve.
