Instructions
Step 1
Slice and pound chicken into cutlets
Step 2
Season with salt and pepper
Step 3
Egg bath: eggs, mustard, honey. Mix well
Step 4
Blend pretzels in food processor until fine (almost breadcrumb like) set aside in bowl

Coat chicken in egg bath, the dredge in pretzel crust on both sides. Press down to ensure its all coated and the pretzels stick to the chicken

In a large frying pan; add oil, about 1.5 cups. set to medium high heat
Step 7
Add chicken and fry in batches until golden brown on both sides (about 3 minutes per side) then move to a wire cooling rack to rest
Step 8
Prep the honey mustard sauce: Mix together bot mustards, honey, mayo, and lemon juice
Step 9
Once chicken is cooked, serve hot with sauce on top
