Step 1
Place a large oven proof pot, or Dutch oven on stove top over high heat. Add olive oil, and meat. Sauté 15 minutes stirring occasionally, until the meat is slightly crusted. While the meat is cooking in a large bowl, combine tomato paste, Worcestershire sauce, beef broth, and flour. Whisk well and set aside. Once the beef has browned, add onion, carrots, potatoes, and crushed garlic then sauté an additional 5 minutes. Add thyme on top. Pour the tomato mixture on top and bring it to a boil. Cover and place in the oven at 375° for 2 hours and 30 minutes. Remove from the oven uncover add frozen peas. Mix well cover with the lid and allow it to sit for five minutes to allow the peas to defrost. Then serve.
