Palestinian stuffed chicken with freekeh

Palestinian stuffed chicken with freekeh
Ingredients:
2 cups freekeh
2 chickens
3 tbsps yoghurt
500 gm minced beef
Handful of almonds
Handful of pine nuts
1 large onion
3 cups of water
Seasoning:
Salt & pepper
2 tsp cardamom powder
2 tsp cinnamon powder
2 tsp paprika
2 tsp all spice
-Start by soaking 2 cups of freekeh in boiling water for 30 minutes.
-meanwhile mix 1 tsp each of the spices and rub the chickens with the yoghurt and spices. Let it marinate for at least 1 hour up to overnight.
-chop the onion finely and saute in a pan with olive oil.
-add the almonds and pine nuts and fry till golden.
-add the minced beef and season with 1 tsp of each of the spices except the paprika.( i said cumin powder in the video but that was a mistake. No cumin powder in the recipe).
-add the drained freekeh along with 3 cups of water and let it boil.
-once it boils. Drop the heat down to a simmer and cook for 30 minutes.
The freekeh will be ready once it turns nice and soft. It will absorb the rest of the water while cooling down.
-stuff the chickens with the freekeh and bake in the oven covered for 1 hour at 180c.
-remove the tin foil and broil for 10 minute till the chickens are nicely browned.
-serve on top of the freekeh with yoghurt and a simple salad.
