Step 1
In a bowl, crack open eggs, season with salt and pepper and whisk well. Place a nonstick skillet sprayed with nonstick spray over medium high heat. Pour in whisked eggs. Top with half of the shredded cheese and once the eggs start to set place your tortilla on top push down and twist to get the tortilla to stick then flip it over. Add the remaining cheese to half of the quesadilla and fold it in half. Crisp it on both sides then enjoy.
