Ingredients

3whole wheat tortillas

3 ozfresh mozzarella
divided into 3 portions
1 stalkgreen onion
2 tspsmoked bacon

1.5 ozmushrooms

grated, divided into two portions

medium, sliced

divided into 3 portions

Instructions
Step 1
Let's start by preparing the egg mixture for the tortillas. Finely chop the stem of the green onion. Whisk the 3 eggs in a bowl, and add the green onion, salt, and pepper to taste. With this mixture, you should get 3 large tortillas: one egg per tortilla. Set it aside.

Cut the fresh mozzarella cheese into thick slices, and set it aside.

Heat a medium-sized skillet over medium heat and add a teaspoon of butter. Immediately after, using a ladle, add the egg mixture until you achieve a thin layer that covers the entire base of the skillet. Let it cook for about 30 seconds and before the egg is fully cooked, place the tortilla on top. This will make the egg stick to the tortilla. Using your hand, try to move it around the skillet, and once you see the tortilla ultimately come off the skillet, flip it with the help of a spatula.
Tortilla 1: Mushrooms & Pesto

Slice the mushrooms not so thinly and reserve. Spray the pan with olive oil and cook them over medium heat. In the end, add garlic powder, salt, and pepper to taste and take them off the heat. Let them cool down a bit before proceeding.

For this recipe, before placing the tortilla in the egg mixture, spread a tablespoon of pesto on one side and place it in the egg mixture.
Step 6
Once you have flipped the tortilla, add the ingredients on one side so it's easy to fold later. First, a couple of slices of fresh mozzarella cheese, some spinach leaves, and the mushrooms, and finish with another couple of pieces of mozzarella cheese. Fold the tortilla and let it toast for a couple of more minutes on each side.
Tortilla 2: Bacon & Cheese

Grate the smoked gouda cheese, like mine, if it's a whole piece.

Follow the same steps with the egg and tortilla, except for the pesto.
Step 9
Once you have flipped the tortilla, add a couple of slices of fresh mozzarella cheese, spinach leaves, the previously cooked and diced bacon, and the corn, and finish with the grated gouda cheese. Flip the tortilla and let it cook in the same way, a couple of minutes on each side.
Tortilla 3: Tomato & Basil

Slice the tomato thinly and reserve. Cut the basil leaves into thin strips.

Follow the same steps with the egg and tortilla.

Once you have flipped the tortilla, add a couple of slices of fresh mozzarella cheese, some spinach leaves, a couple of slices of tomato, and the basil, and finish with the grated gouda cheese. Flip your tortilla and let it cook equally on each side for a couple of minutes.

Cut your finished tortillas in half and serve.
