Instructions
Step 1
Prep: Cook the sweet potato noodles according to package instructions (if using pre-made) or spiralize your sweet potato. Prepare all vegetables and thinly slice the chicken breast. Whisk together the sauce ingredients in a small bowl.
Step 2
Heat and Cook: Heat 1-2 tablespoons of oil in a large wok or skillet over high heat. Add the chicken and cook until browned and cooked through (about 3-4 minutes). Transfer to a plate.
Step 3
Stir-Fry Veggies: Add another tablespoon of oil to the pan and stir-fry the bell peppers and onion for 2-3 minutes. Add the carrots and broccoli, stir-frying for another 2-3 minutes until slightly softened.
Step 4
Combine and Sauce: Push the veggies to the side of the pan and add the cooked chicken back in. Pour in the sauce and stir to coat everything evenly.
Step 5
Add Noodles and Finish: Add the cooked sweet potato noodles and toss gently to combine. Cook for another minute or two until the noodles are heated through and slightly softened.
Step 6
Serve: Remove from heat and immediately garnish with fresh basil leaves, chopped peanuts, and chili flakes (optional). Serve hot.
Step 7
Tips:
Step 8
For a vegetarian option, replace the chicken with tofu or tempeh, cubed and marinated in similar flavors.
Step 9
Feel free to adjust the type and amount of vegetables to your liking. Other options include green beans, snap peas, or baby corn.
Step 10
Adjust the amount of chili flakes for your desired spice level.
Step 11
Serve with lime wedges and additional soy sauce for dipping.
Step 12
You can also cook the chicken and then stir-fry everything together, omitting the step of pushing the veggies aside.
