Step 1
Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
Step 2
Toast the panko breadcrumbs in a pan with a little oil until they turn golden brown. Transfer the toasted breadcrumbs to a bowl and add the parmesan cheese, salt, and black pepper. Mix well. Set aside.
Step 3
Cut the boneless fish into strips measuring approximately 1.5 x 11 cm (3/5 x 4.5 inches). Keep in mind that the fish will shrink by about 30% in length during cooking.
Step 4
In a bowl, combine the salt, cumin powder, black pepper, red chilli powder, cayenne pepper, white vinegar, soy sauce, plain flour, corn flour , egg and mix herbs. Mix well to form a marinade.
Step 5
Place the fish strips in the marinade and coat them evenly. Allow the fish to marinate for 30-40 minutes.
Step 6
Take a fish strip from the marinade and shake off any excess marinade. Dip the fish strip into the breadcrumb mixture, pressing gently to adhere the breadcrumbs to the fish. Use your fingers to ensure an even coating.
Step 7
Place the coated fish strip onto the prepared baking tray. Repeat the process with the remaining fish strips.
Step 8
Spray the fish strips with oil to help them crisp up in the oven.
Step 9
Bake the fish fingers in the preheated oven for about 13 minutes or until they are crispy and golden brown on the outside.
Step 10
Once baked, remove the fish fingers from the oven and serve immediately with lemon wedges, tartare sauce, or your choice of sauce.
