Instructions

Step 1
Start by simmering the packaged udon noodles in hot water for 2-3 minutes for the noodles to separate and immediately drain and rinse under cold water.
Step 2
In a large pan heat avocado oil to medium heat and add onions, carrots and shiitake mushrooms.
Step 3
Cook for 2-3 minutes and toss in napa cabbage and garlic. Cook for another 2-3 minutes before adding udon noodles, sesame oil, soy sauces, oyster sauce, brown sugar and green onions.
Step 4
Cook for another 2-3 minutes and serve with a drizzle of chili oil.
