2 tablespoonsfajita seasoning
easy to make diy

1 lbboneless skinless chicken breasts
cut into 1"cubes

3 Tbspolive oil

1onion
medium, chopped

3garlic cloves
minced

3 cupswater
or stock

15 ozcan black beans
rinsed and drained

14.5 ozcan diced tomatoes with zesty mild green chilies
undrained

11 ozcan mexicorn
drained

3 cupsrice
cooked

4 ozcan chopped green chilies

11 ozcheddar cheese soup
undiluted, or DIY cheese sauce

3 tablespoonsfresh cilantro
minced 1 tbsp

1 Tbsplime juice
Instructions
Step 1
in a large resealable plastic bag combined flour and two tablespoons fajita seasoning; add chicken. Seal bag and shake to coat. (Or just put it in a bowl and stir it around)
Step 2
In a large saucepan, sauteed chicken in oil until juices run clear; remove and keep warm
Step 3
In the same pan, saute onions and garlic until onion is tender.
Step 4
Stir in water, beans, tomato, corn, rice, chilies. Bring two a boil semicolon reduce heat, cover and simmer for 5 minutes.
Step 5
Stir in cheese sauce, cilantro, lime juice and chicken; heat through
