Edit-One Pot Golden Spinach Noodle Soup
This comforting soup uses humble ingredients like dried anchovies, century egg, spinach and goji berries. Pumpkin is optional, but if you have it with you, the sweetness from this starchy vegetable makes the soup even more soul-hugging!
Edit- substituted fermented bean curd for the century egg, sweet potato for the pumpkin, fish tofu for anchovies, and silken tofu for eggs

Step 1
1. Heat up oil in a pot. Add garlic and fermented bean curd into the pot. Stir fry for 2 minutes.
Step 2
2.Add sweet potato. Stir fry for 3 minutes or until the pieces start to crisp.
Step 3
3.Add water, mushroom powder and goji berries. Bring to a boil.
Step 4
4. Add silken tofu and fish tofu, and turn heat down simmer at medium heat for 5 minutes.
Step 5
5. Add spinach and green peas.
Step 6
6. Once the spinach is cooked, enjoy!
