Instructions
Step 1
-300g silken tofu
-1/3 cup (45g) chickpea flour
-2 Tbsp corn starch
-1/4 cup (60ml) plant milk
-season to taste: salt, (kala namak for an egg flavor, pepper, paprika etc)
Blend until smooth.
Step 2
Fry the veggies in some oil and season with salt, pepper, paprika and cumin.
Step 3
Add it to the egg mixture and stir.
Step 4
Add it to an oiled pan, close the lid and cook on medium heat for 5mins.
Step 5
Place a plate on the pan and turn to flip the omelette.
Step 6
Slide it back in the pan and fry 2-3 more minutes.
