Instructions
Step 1
Sear the beef chunks on all sides until browned
Step 2
Add onions, garlic, and ginger, and chili peppers and cook for a few minutes. Add salt, pepper, and peppercorns
Step 3
Add enough water to cover, braise for about an hour. Check on it every 10-15 minutes - if anything is sticking to the bottom scrape it off and add water as needed
Step 4
Add the gochujang sauce, stir in and keep braising for 20 more minutes
Step 5
Add carrots, keep braising for at least 30 more minutes but start checking every 5 minutes, the sauce will start sticking to the bottom very quickly
Step 6
Serve with rice. Yummy yummy!
