DAY 24 of VEGANUARY | Blueberry crumble bars 🫐
…with a lil extra hit of protein!
Just imagine a salty biscuity base, sweet jammy middle and a golden crumble topping. I’m afraid it does not get better than this!
For the base and topping:
▫️ 220g oat flour
▫️ 60g rolled oats
▫️ 60g
salted caramel soy protein
▫️ 1 tsp baking powder
▫️ 1 tsp cinnamon
▫️ 1/2 tsp salt
▫️ 50g maple syrup
▫️ 80g coconut oil, melted
For the middle:
▫️ 400g frozen blueberries
▫️ 1 tbsp chia seeds
▫️ Vanilla flavdrops (or sweetener of choice)
Mix together your ingredients that will form the base and topping until you get a crumbly, but pack-down-able, mixture. Transfer 2/3 of the mixture into a greased 8x8 tin and pack down evenly. Microwave your berries and sweetener on 1 minute intervals, until slightly softened and jammy. Pour onto the base layer and follow with sprinkling the remaining 1/3 of the base mixture over the top. Bake for 25 minutes at 180C.
These will last for up to 6 days in an airtight container in the fridge, or you can freeze them. I like to microwave before serving and enjoy with yoghurt for breakfast, or on their own with a coffee in the afternoon. ENJOY 🤍
