Miso tuna sushi bowls

What would you include in your sushi bowls?

Ingredients:
Tuna:
1 lb fresh tuna, 1-1.5 inches thick (we cut in half for thinner pieces)
2 tbsp miso paste
1 tbsp soy sauce
1/2 tbsp maple syrup
1 tbsp freshly minced ginger
Juice of 1/2 lime
Sesame seeds

Bowl:
Sushi salad:
1.5 cups uncooked sushi rice, cooked according to package directions
1/4 cup rice vinegar
3 tbsp sugar
1 tsp salt
Julienned cucumber
Edamame beans
1 green onion, sliced
Pickled ginger
1-2 avocados
Mango
1 sheet nori, sliced
French fried onions

Sauce options:
Soy sauce
Spicy mayo (aka mayo mixed with sriracha hot sauce)
Mayo mixed with soy sauce, a drop of sesame oil, maple syrup
Hoisin sauce
Extra marinade

Marinate tuna in mixture of miso, soy, maple syrup, ginger and lime juice for about an hour.
In the meantime, prepare sushi rice. Bring vinegar to a boil with sugar and salt, stirring until sugar is dissolved. Remove from heat and pour over rice.
Remove tuna from marinade and coat well with sesame seeds. Sear 2-3 minutes per side. Allow to cool for a short time prior to slicing.
Top sushi rice with sliced tuna, cucumber, edamame beans, green onion, avocado, mango and nori. Garnish with French fried onions. Drizzle on whichever sauce you’d like.
