1 cupbulgur wheat
cooked

1 cupcucumber
chopped

½ cupred onion
diced

½ cupfresh parsley
chopped

¼ cupfresh mint
chopped

1 cupfeta crumbled

1 x 15 ouncecan chickpeas
garbanzo beans, rinsed and drained

½ cuppistachios
chopped

½ cupturkey bacon
cooked, chopped, optional

¼ cuplemon juice
freshly squeezed

2 tablespoonsextra virgin olive oil

1 teaspoonkosher salt

½ teaspoonblack pepper

This recipe yields 6 entree portions (or 10-12 side servings).

Step 1 Cook the bulgur

In a saucepan, cook the bulgur according to the package directions. Once fully cooked, transfer to a bowl and let cool. (This is another Mediterranean bulgur salad we love.)

Step 2 Cook the turkey bacon

In a frying pan, cook the turkey bacon until crisp. Remove, let cool, then roughly chop.

Chop, slice and dice (or julienne if you please) the remaining salad and add them to a bowl.

Step 4 Make the dressing

In a small bowl, whisk together the lemon juice, olive oil, salt and pepper—just as you would for any homemade vinaigrette.

Step 5 Toss and serve

Combine the together in a serving bowl and toss to combine with the dressing. Serve immediately.
