Ingredients
2 servings

4carrots
chopped into batons

2chicken breasts
large, thin cut

600grice noodles
cooked

2 Tbspcoriander
chopped

1 ½ Tbspcurry powder

25gfresh root ginger
peeled and grated

1clove garlic

2 Tbspgroundnut oil

1red chilli
finely chopped

1red onion
medium, peeled cut into half moons

2red peppers
small, sliced

1 ½ Tbsprice vinegar

1 ½ Tbspsesame seed oil

2 Tbspsoy sauce

4spring onions
thinly sliced

3 Tbspsweet chilli sauce
Instructions
Step 1
Mix all ingredients for the marinade in a bowl and add chicken
Step 2
Prepare the veg
Step 3
Fry the veg for 2 mins
Step 4
Fry the chicken, without marinade until cooked
Step 5
Add veg back with marinade and noodles, heat until piping hot
Step 6
Serve and scatter over chopped coriander
