Ingredients

100mlnatural yoghurt
450gchicken thighs
1 Tbspgaram masala
½ tspturmeric
40gbutter
or ghee
1stick cinnamon
3cardamom pods
lightly crushed
2bay leaves
3onions
sliced thinly
1 Tbspgarlic and ginger paste
3birdseye chillies
halved, feel free to add as many as you like
1 tspturmeric
1 heaped tbspgaram masala
250mlwater
or stock
150mlnatural yoghurt
80gcashew nuts
50mlmilk
Instructions
Step 1
1: Marinade the chicken in a bowl, along with the yoghurt, spices and salt. Leave to stand for an hour if you have time, but if not, these are good to go. Thread onto skewers, then cook in your air fryer set at 200° for 12 minutes. Don't worry, if the chicken isn't fully cooked through as it will finish cooking within the sauce.
Step 2
Melt the ghee then adding the cinnamon, Cardamon and Bay leaf.
Leave to Fry for a minute then add in the sliced onion. Cook on a very low heat for 30 minutes stirring frequently. The onions should be golden and sticky, pour in a splash of water, occasionally, if the onions start to catch. Add in the ginger, garlic and spices then cook for a further
2-3 minutes.
Step 3
Remove a couple of tablespoons of the cooked onions, then blend this along with the natural yoghurt, cashew nuts and milk. Set to one side.
Step 4
Pour in the stock then bring up to a gentle simmer, season with salt and pepper. Pop the chicken into the pan.
Pour in the cashew blend, cook for a further 10 minutes over a gentle heat.
