Instructions
Step 1
Place saucepan over a medium heat and toast the seeds for a minute or two, until they release those distinctive aromas.
Step 2
Add the olive oil and carrots, cook for 2-3 minutes until carrots begin to soften. Add turmeric, garam masala, cinnamon, sugar, half a teaspoon of salt and plenty of black pepper. Cook for another minute.
Step 3
Add the rice, stir to coat the rice with oil and carrots, then add the water. Bring to a boil, cover and simmer on very low heat for 15 minutes.
Step 4
Remove from the heat, lift off the lid and cover the pan with a clean tea towel. Seal tightly with the lid and set aside for 10 minutes
