Instructions

Step 1
Boil coconut cream in the wok over low heat until oil appears on the surface.
Step 2
Add curry paste and stir-fry for 1 minute or until fragrant.
Step 3
Add chicken and cook until it turns white (but not completely cooked) then add the coconut milk and bring to the boil. Add palm sugar and fish sauce.
Step 4
At the last moment add the chilli, lime leaves and sweet basil leaves.
Step 5
Cook for 5 – 10 seconds only. Remove from heat and serve with steamed rice.
