Ingredients
4 servings
2 Tbsextra virgin olive oil
1brown onion
roughly chopped
2 Tbsginger
grated
3cloves garlic
crushed
3tomatoes
chopped
½ cupcashews
roughly chopped
2 Tbsnatural yoghurt
500gchicken breast fillets
sliced
1 tspgaram masala
1 tspcurry powder
¼ tspground turmeric
1 cupchicken stock
note you may not need the full cup
⅓ cupdried apricots
chopped
sultanas
2 Tbscoriander
chopped, plus extra to serve
Basmati rice
cooked, to serve
Instructions
Step 1
Heat oil in a medium saucepan on low. Sauté onion, ginger and garlic for 8 – 10 minutes.
Step 2
Place tomatoes, cashews and yoghurt in a food processor. Pulse until just combined and nuts are chunky. Add to onion mixture.
Step 3
Add chicken and spices. Cook, stirring, for 5 minutes, until fragrant.
Step 4
Blend in stock, apricots, sultanas and coriander. Simmer for 25 – 30 minutes, until chicken is tender and sauce has thickened. Serve with rice and coriander.
