Step 1
Combine the turkey and shallots in a mixing bowl and season with salt and pepper as needed. In a small bowl, beat together the egg, oregano, thyme, and garlic powder. Pour this mixture over turkey.
Step 2
Add the cheese and, using your hands mix the ingredients until we'll combined. Form the meat into 4 oblong patties about 1/2 inch thik.
Step 3
Heat the olive oil in a large nonstick skillet over medium-high heat. Cook the burgers 5 to 6 minutes on each side, until completely cooked through.
Step 4
While the burgers cook, combine the yogurt and lemon zest in a small bowl. Season with salt and pepper to taste. Spread 1 tablespoon of yogurt mixture inside each pita half.
Step 5
When the burgers are cooked, put each in a pita half. Cover with the lettuce leaf, tomato slice, and cucumber slices and serve.
