Instructions
Step 1
Brown chicken and onions together in a large pot
Step 2
Add spices and stir, then deglaze with the beer or chicken stock.






Step 3
Add tomato paste, Rotel, beans and simmer. The longer it summers the more the flavor comes out. Taste periodically and add more seasoning as needed.




Step 4
Taste test frequently. Consider adding a dash of sweetener (maple syrup), lime juice, hot sauce, cilantro in the simmer process

Step 5
Garnish with cheese, lime, and cilantro. Serve over rice, noodles, or cornbread.
