Instructions

Step 1
In a bowl, crack 5 eggs and whisk away with 1.5 Tbsp of sugar, 1/4 Tbsp of salt, 5 Tbsp of water OR milk.

Step 2
To make the egg mixture smoother, let it go through a strainer if you have one.
Step 3
Heat up your pan to medium heat. Drizzle a dash of oil and spread a thin layer of egg mixture on to your pan. When it's 70% cooked, fold 1/3s in. Fold again.
Step 4
Then move it to one side of the pan. Pour in another thin layer, making sure it attaches to the end of the folded egg roll. Fold and roll and continue until all egg mixture is used!
Step 5
Gently slice into pieces. Mine was around 4-5cm!
Step 6
Next, season your rice with 1 Tbsp of sugar, 1 Tbsp of vinegar, and a pinch of salt. Mix.

As an optional step, cut up 2cm thin strips of nori so you can wrap it around your sushi.

Step 8
With wet hands or with gloves, make small cylinder rice balls. Lay them out on a plate.
Step 9
Place your egg pieces on top and wrap them with nori.
Step 10
You can serve it with some soy sauce if you'd like! Enjoy!
