Instructions
Step 1
Bring the eggs to room temperature

Trim the broccoli
Step 3
Skin the chorizo and cut into chunks
Step 4
Heat the oil in a frying pan over a medium heat
Step 5
Fry the chorizo until starting to crisp, turning regularly, about 10 minutes

Meanwhile, put the eggs in a pot of hand-hot water, cover, and bring quickly to the boil

Boil the eggs for four minutes (5 if extra large)
Step 8
Run the eggs under a cold tap, then peel as soon as they're cool enough
Step 9
Cook the broccoli in a large pan of salted, boiling water for 3-4 minutes
Step 10
Drain the broccoli
Step 11
Add the broccoli to the chorizo pan and toss
Step 12
Season and serve
