Whole cauli and tahini salad

Instructions

Step 1
Drizzle cauliflower florets with olive oil. Season with salt and pepper - roast for 15-30 mins
Step 2
Finely slice the cauliflower leaves and finely chop the stem into matchsticks
Step 3
Simmer vinegar then add sugar, stir until dissolved. Add cauliflower leaves and stems. Leave for 5-10 mins
Step 4
Blend tahini, garlic, coriander, parsley, 1/2 lemon juice. Add water until pourable. Season to taste
Step 5
Thinly slice onion, put in bowl of cold water for 2-3 mins
Step 6
Dress the rocket and some beans with 1/2 lemon juice, olive oil, salt and harissa. Layer on top the cauliflower, pickled leaves and stalks, red onion, more beans and tahini dressing. Curry powder sprinkled on top
