Step 1
Preheat oven to 400F.
Step 2
Cut the zucchinis down the middle and remove any seeds and some of the insides.
Step 3
Lay them in a 9X13 casserole dish and top with the olive oil, salt, and pepper. Cook for 12 minutes.
Step 4
While the zucchini is in the oven start on your filling.
Step 5
To a pan brown the meat and drain any excess grease.
Step 6
Stir in the taco seasoning and water until the meat is evenly coated.
Step 7
Add in the rotel and corn and stir until everything is combined.
Step 8
Add an even amount of filling into each zucchini. If there is extra filling just pour it evenly over the top.
Step 9
Cover with foil and bake for 30 minutes.
