Step 1
Coat salmon filet in ginger, 1 tbs coconut aminos, and 1 tbs sweet chili sauce. Bake at 375 for 20 minutes.
Step 2
Finely dice mango, cucumber, tomato, and red onion and mix with remaining coconut aminos & chili sauce.
Step 3
Heat brown rice and create the base of your bowl. Add filet of salmon and top with mango salsa.
Step 4
Top with cilantro or mint for an extra kick!
