1 x 15 ozchickpeas
can
½ cupsun-dried tomatoes
0.5cucumber
½ cupred onion
½ cupolives
¼ cupparsley
¼ cupfeta cheese
crumbled
FOR THE DRESSING
Instructions
Step 1
1. Drain the can of chickpeas and transfer to a large bowl. Add the sun-dried tomatoes, cucumbers, onions, olives, parsley and feta cheese and stir to mix.
Step 2
2. Combine all the dressing ingredients in a bowl. Refrigerate both the salad and the dressing for an hour before combining and serving
