This is very easy, delicious, vegan curry udon recipe that you can make in under 20 minutes. It is also single serve so you don’t have to worry about any leftovers!

Instructions
Step 1
First dice your onion, heat up the oil in a small pot and fry until golden brown.
Step 2
Now add the curry powder, salt and pepper and stir everything in.
Step 3
Pour about 1/2 a litre of water into the pot and bring to boil.
Step 4
Cut you tofu into cubes and put it into the pot so it can infuse all the curry flavour.
Step 5
After 5 minutes add your udon noodles. Boil until soft.
Step 6
Meanwhile prepare the corn starch slurry. Mix together the corn starch and about 3 tbsp of water. Add the water gradually so you don’t get any lumps.
Step 7
Gradually pour the corn starch slurry into the pot while continuously stirring. Keep boiling until you get nice slightly thick consistency.
Step 8
Serve with some freshly cut spring onion and enjoy!
