Instructions
Step 1
Grate the cucumber using the large holes of a box grater. Sprinkle with salt and let sit for 10-15 minutes to release excess liquid. Squeeze out the cucumber's liquid using a cheesecloth or thin towel.
Step 2
In a bowl, combine the strained Greek yogurt, grated and drained cucumber, minced garlic, olive oil, vinegar, salt, pepper, and fresh dill. Mix well.
Step 3
Cover and refrigerate for at least 1 hour (or ideally overnight) to allow flavors to meld.
Serve chilled with pita bread, vegetables, or as a condiment for grilled meats and souvlaki
