Step 1
Slice a large cucumber lengthways then use a spoon to scoop out the seeds as these are very watery . Now grate the cucumber over a towel pat the cucumber with paper towels to soak up some moisture and sprinkle with salt and let sit 5 minutes

Step 2
In a bowl add yogurt crushed garlic salt pepper olive oil white wine vinegar chopped dill and chopped parsley . By the way this is the ratio i like but you could add 50/50 dill to mint ratio depends on your preference . Now mix this all together to combine

Step 3
Use the towel to squeeze out the excess moisture from the cucumbers and then add the cucumber to the yogurt and mix together . Put in the fridge until ready to use . I love to dip a big chunk of pitta into my tzatziki and serve it with Greek fried chicken
