Blackened Chicken spinach wrap
4 steps
Prep:15minCook:30min
First recipe on this platform so excuse me if I miss something. This should be a relatively simple recipe for a high protein chicken wrap. Using egg and spinach to make the wrap and assemble while everything is warm. Should be relatively easy to scale up to whatever serving sizes you need. I will multiply this by 7 when I make it so that I have meal prep throughout the week. If you have any notes or improvements I will more than happily take them into consideration. We always willing to grow here.

Prep
Step 1
For prep we're going to want to dice the onion and mince the garlic. The spinach is going to be going into a sauce that goes over the chicken so you want to chop it relatively finally so it can be blended later. Chicken should be chopped into relatively small pieces or if you prefer long strips to fit within the wrap. Add salt, paprika, chili powder and Italian seasonings to chicken before cooking. Spinach and egg should be blended separately from everything and put into a bowl for later. Once all this is done you should be ready to start cooking.
Making the wrap
Step 2
The rap is relatively simple It may be easier in a small pan. Using a non-stick pan will most certainly make this easier as well.Take your spinach and egg blend pouring it into a pan over medium low heat. Wait for the egg to completely solidify. Once you can fit a spatula under it without it falling apart it is more or less done. Remove from heat and let cool.

Making the broccoli mayo sauce
Step 3
This one's a lot simpler Cook down the broccoli so that it is soft but not mushy or you can just skip the cook and use raw broccoli completely up to you. Blend broccoli mayo lemon a
cilantro and a pinch of salt. Once fully blended you should have a sauce. You can add water to thin and your choice of thickener to make thickened.
Mayo15g
lemon juice
Cilantro1 tsp
salt
Making the chicken
Step 4
On a medium high heat add onions to pan with a bit of your choice of oil. Wait for it to start to turn translucence then add your garlic. Once the garlic becomes fragrant you can then add the chicken. Increase heat to medium high. If your chicken pieces are small enough they should cook relatively quickly we are trying to get a nice crust for the blackened chicken. One's chicken is fully cooked removed from heat and place to the side for a final assembly.
