Instructions
Step 1
1. **Prepare the Chicken:**
Step 2
- In a large pot or Dutch oven, heat the vegetable oil over medium heat.
Step 3
- Add the chicken pieces and brown them on all sides. Remove the chicken from the pot and set aside.
Step 4
2. **Cook the Vegetables:**
Step 5
- In the same pot, add the chopped onion and cook until softened and translucent.
Step 6
- Add the minced garlic and cook for another minute.
Step 7
- Add the chopped tomatoes, tomato paste, and diced carrots. Cook for a few minutes until the tomatoes start to break down.
Step 8
3. **Add Spices:**
Step 9
- Add the cumin, coriander, cinnamon, cardamom, cloves, and turmeric to the pot. Stir well to combine and let the spices cook for a couple of minutes to release their flavors.
Step 10
4. **Cook the Chicken:**
Step 11
- Return the browned chicken pieces to the pot and stir to coat them with the spices and vegetables.
Step 12
- Pour in the chicken broth, ensuring the chicken pieces are mostly covered. Add salt and pepper to taste.
Step 13
- Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for about 20-25 minutes, or until the chicken is cooked through and tender.
Step 14
5. **Cook the Rice:**
Step 15
- Rinse the basmati rice under cold water until the water runs clear.
Step 16
- Add the rice to the pot with the chicken and broth. Stir to combine.
Step 17
- Increase the heat to bring the mixture to a boil again, then reduce to low heat, cover, and simmer for about 15-20 minutes, or until the rice is cooked and has absorbed most of the liquid.
Step 18
6. **Serve:**
Step 19
- Once the rice is cooked, remove the pot from heat and let it sit, covered, for another 5 minutes.
Step 20
- Fluff the rice with a fork and garnish with fresh cilantro or parsley if desired.
Step 21
- Serve hot, ensuring each serving has a good mix of chicken, rice, and vegetables.
