Ingredients
4 servings
½ cupred lentils
¼ cupmoong dal
¼ cuptoor dal
4 cupswater
½ tspsalt
¼ tspturmeric
½ tspcooking oil
2bay leaves
2 Tbspcooking oil
1 tspcumin
1onion
small, chopped
2dried red chilies
1 ½ tspgarlic
chopped
1 ½ tspginger
chopped
1 tspkashmiri chili powder
1 tspcoriander powder
¼ tspturmeric powder
1tomato
small, chopped
½ tspdried fenugreek leaves
¼ cupwater
1 Tbspbutter
2 Tbspcoriander
chopped
½ tspcumin powder
roasted
1 Tbspghee
Warm, for tadka
Instructions
Step 1
Soak red lentils, moong dal, and toor dal in water for 20 minutes.
Step 2
Add soaked dal to 4 cups of water.
Step 3
Add salt, turmeric, cooking oil, and bay leaves.
Step 4
Cook on low simmer until soft, about 20 minutes.
Step 5
Heat cooking oil in a pan.
Step 6
Add cumin, chopped onion, and dried red chilies.
Step 7
Sauté until light brown.
Step 8
Add chopped garlic and ginger, sauté briefly.
Step 9
Add Kashmiri chili powder, coriander powder, turmeric powder, and a splash of water.
Step 10
Add chopped tomato and sauté for 2 minutes on medium-high heat.
Step 11
Add dried fenugreek leaves.
Step 12
Combine cooked dal with the cooking base.
Step 13
Add 1/4 cup water, butter, chopped coriander, and roasted cumin powder.
Step 14
Finish with warm ghee for tadka.
